Cox Sauce Baby Back Ribs

Baby back ribs have more meat than other cuts and take the least time to cook. Good BBQ baby back ribs can be done in 4 hours or less. That’s a good afternoon BBQ without having to commit your whole day. We use the foil method, but you’re welcome to cook them as you prefer.

Ingredients

Baby back ribs, cajun seasoning, brown sugar, Cox Sauce

Prep time: 15 minutes.
Cook time: 3-4 hours.

Remove the membrane from the underside of the ribs.
Mix your favorite Cajun seasoning with brown sugar. Start with equal parts Cajun seasoning and brown sugar. Adjust ratios to taste.
Generously season both sides of the ribs. You may do this the night before for more flavor.
Prepare a smoker at 250 degrees. We prefer a lump charcoal fire with added chunks of white oak, but you may use whichever fuel and wood you prefer.
Smoke ribs at 250 for 2 hours.
Remove ribs from smoker and wrap in 2 layers of foil. Place ribs back on smoker with rib bone tips pointed up.
Smoke foiled ribs at 250 for 1.5-2 hours.
Remove ribs from smoker, carefully remove foil, and place back onto the smoker, with the rib bone tips pointing up.
Generously sauce the underside of the ribs, close lid, and cook for 20 minutes, keeping smoker at 250.
Carefully flip ribs, generously sauce the presentation side, close lid, and cook for 20 more minutes.
Sauce should be shiny and red. Meat should be very tender, but NOT “fall off the bone.”
